Having a hearty, healthy breakfast is a wise way to start the day, but finding the time on a busy morning isn’t always easy. That’s why we’ve selected a bunch of super simple breakfast recipes that won’t take more than 10 mins of your valuable sleep time.
From fruity bowls to savory sandwiches, these healthy breakfast ideas are perfectly balanced and great to eat in or take on the go!
1. Tuna & Tomato Omelette
Omelettes are one of our favorite versatile breakfast options.. They’re both customizable and easy to make – just what we need on busy weekdays. This version takes the classic combination of tuna and tomato and elevates it with the addition of a crunchy apple side salad. Feel free to experiment with different fillings, but be sure to include veggies!
2. Smoked Salmon, Ricotta & Basil Wrap
This quick breakfast is enough to get you out of bed! Simply spread pesto on the tortillas and add slices of smoked salmon before topping with a good spoonful of ricotta, a creamier alternative to cottage cheese that’s ideal as a sauce. Add fresh greens and roll into a decadent, nutrient-rich breakfast that can be taken to-go.
3. Avocado, Cucumber & Chicken Sandwich
This deliciously simply sandwich is perfect for a for a rushed morning. Start with wholesome bread (like the one in Coach Jennifer’s bread recipe) and top with rich avocado, chicken and crunchy cucumber for a wonderful textural mix that’s sure to satisfy. You can use good quality deli-style sliced chicken, or pre-cook some chicken and keep it handy in your fridge.
4. Tangerine & Honey Couscous
Tickle your tastebuds with this Middle Eastern-inspired breakfast by combining fluffy whole grain (pre-cooked) couscous with tangerine pieces, Greek yogurt and pistachios, then spice it with cinnamon and zest for a bright, fresh flavor. You can even keep couscous and Greek yogurt on-hand and experiment with different toppings every morning.
5. Yogurt with Oats, Apple & Almonds
All the ingredients are in the name (almost). You’ll find plenty of protein, healthy carbs and fats to keep you going all morning in this well-balanced, classic combination. With only three main ingredients, it’s almost guaranteed that you’ll have what you need to make this shake any given morning. Bonus: it’s suitable for all diet types and works perfectly as a snack or dessert too.
7. Cottage Cheese with Berries & Walnuts
Perfectly balanced macros in under three minutes? Yes, please! This recipe is as simple as it gets: just mix cottage cheese with walnuts and berries. For this recipe, we went for fresh blueberries and raspberries, but you can replace them with the berries of your choice – even frozen fruit you’ve pulled out to thaw the night before, if you don’t have any fresh on-hand.
8. Maple Chia Overnight Oats
Ease your AM stress with this overnight maple-chia oat pudding, packed full of nutrient-dense peanut butter, pumpkin seeds and banana. It’s convenient to batch prep the night before, so it’ll be patiently waiting for you in the fridge the next morning – and you can roll out of bed a whole 10 minutes later than usual.
