8fitters Share Their Favorite Quick 8fit Meals
8fitters Ana and Brian live together in Spain and find that with their busy schedules, they aren’t able to spend as much time in the kitchen as they’d like. Not only do they rush out the door to get to work on time in the morning, but they often find themselves making plans with friends after work, not leaving much time for healthy dinner in between.
This 8fit duo learned quickly that simple is often best. When Ana and Brian sat down with us at 8fit HQ recently, we asked them, “What are your go-to 8fit recipes when you don’t have much time, but you’re hungry?” Their answers prove that healthy meals don’t need to be elaborate.
Ana’s healthy smoothie breakfast
“When I have to start early or I’m in a rush, I have a smoothie with banana, milk, peanut butter and cinnamon for breakfast and leave,” shared Ana. “For lunch and dinner, it depends. Scrambled eggs with vegetables are always easy, as are legumes. We always buy canned legumes so we don’t need to soak them in water and prepare them.”

“My signature dish is the one which Ana used to get me hooked on the app using scrambled eggs with grilled or boiled vegetables,” explains Brian. “I usually use two eggs, zucchini or green pepper. If there is no green pepper, I replace it with onion or tomato. I scramble the eggs together with the vegetables and serve it with avocado.” This dish makes a great breakfast, but also works for lunch, dinner, and snack. At snack time, just use one egg and one type of vegetable. “It’s a great recipe to have on hand. It’s fast and useful for people who don’t like to cook or who don’t have a long time to spend in the kitchen. This is my favorite dish and one of the reasons why I started using 8fit.”
